Black Bean Salad
1 - 15 oz can black beans, rinsed and drained
1 - 16 oz can yellow whole kernel corn, rised and drained
1 - 7 oz can chopped green chiles with liquid
1 red bell pepper, diced small
1 purple onion, diced small
3 TBSP cilantro, chopped fine
Juice of 1 lime
1 tsp chili powder
1 tsp garlic powder
Combine all ingredients and serve either hot, room temperature or cold Makes 8 to 10 servings |
