Spinach and Jello Salad Recipe courtesy of Mimi
Spinach Salad
Dissolve 2 small pkgs. lemon jello in 1 cup boiling water. Cool. Add:
1 box frozen chopped spinach (cooked and drained)
2 cups small curd cottage cheese
1 cup chopped celery
4 TBSP chopped green onions
1 cup mayonaise
2 TBSP white vinegar
1 tsp each salt, pepper and cayenne pepper
Refrigerate and let jel
