Overbaked White Potatoes
Preheat oven to 450 degrees. Wash 2 large baking potatoes well and dry thoroughly. Pierce them several times with the tines of a fork. Place potatoes on the center rack of preheated oven and bake for 2 hours. remove from oven; cut lengthwise and across the middle, almost through them. The shells will be very crisp and thick and will not squeeze easily. Open the potatoes and mash the inside pulp with a fork. Makes 2 servings. The inside will be a rich, buttery consistency, so you really don't need to add butter or sour cream
