Bran Muffins
1 1/4 cups all-purpose flour
1 TBSP. baking powder
1/4 tsp. salt
1/2 cup sugar
1 1/2 cups All Bran cereal
1 1/4 cups milk
1 egg slightly beaten
2 TBSP. vegetable oil
Stir together flour, baking powder, salt and sugar - set aside.
Measure All-Bran cereal and milk into mixing bowl. Stir to combine. Let stand 5 minutes or until cereal is softened. Beat well (with Rotary Beater). Add flour mixture~ stirring only until combined. Portion batter evenly into 12 greased 2 1/2 inch muffin pan cups
Bake at 400 degrees about 25 minutes or until golden brown. Serve warm. |
