Sticky White Icing for Devil's Food Cake
2/3 cup sugar
1/2 cup white Karo syrup
3 TBSP hot coffee
pinch of salt
1 tsp. vanilla
2 egg whites (beaten stiff)
Put sugar, syrup, salt & coffee in pan and cook slowly until it will form a hard ball in cold water (on candy thermometer it should read about 242 - 244 degrees). Right before it reaches this temp, beat egg whites in electric mixer until stiff, then pour hoit mixture over slowly, in a small stream, with mixer going fast all the time. Then add vanilla and continue beating until icing is fluffy. Frost cooled cake |
