Oatmeal Cookies Recipe courtesy of Mimi
Oatmeal Cookies
Pre-heat oven to 350 degrees
Combine:
1 cup vegetable shortening
1 cup sugar
1 cup brown sugar
2 eggs, slightly beaten
1 tsp vanilla
1 1/2 cups flour
1 tsp soda
1 tsp. salt
3 cups oatmeal
1 cup chopped pecans
1 cup raisans (or dried cranberries)
Beat shortening and sugars until creamy - Add eggs & vanilla
Mix well
Combine flour, soda, salt and add to shortening mixture
Mix well - stir in oats & raisins (or cranberries)
Using rounded Tablespoon - spoon up - roll into balls
Place 2 inches apart on greased cookie sheet - flatten with a fork
Bake 10 - 12 minutes at 350 degrees or until lightly browned - Let stand 1 minute before removing to racks to cool |
