Apple Cake
2 cups raw tart apples (diced)
1 cup sugar
1 beaten egg
1 tsp vanilla
1 1/2 cups flour
1 tsp soda
1 tsp cinnamon
1/2 tsp salt
1 cup chopped pecans
Topping:
Put 1 cup brown sugar and 3 TBSP heavy cream (whipping cream) in pan and boil for 2 or 3 minutes. Pour over batter and bake in 325 degree oven for 35 to 40 minutes. To serve, top each square with whipped cream. Serves 10
Combine diced apples and sugar in large bowl and mix well. Let stand for 10 minutes.
Sift together flour, soda, cinnamon and salt and add to apple-sugar mixture. Add egg, vanilla and pecans. Mix well - it will be very dry.
Put mixture into baking dish (8 x 11 x 1 1/2)
Set aside
