Into a 2 cup measure, break 3 large eggs. Add milk or cream to make 1 1/4 cups. Add 1/4 tsp. salt, sprinkle of pepper, 1 1/2 TBSP margarine (cut into 1/4" bits). Beat eggs, cream with salt and pepper until fluffy. Add margarine bits. Then add:

For cheese Quiche - use 3 oz. (3/4 cup) grated cheese

For vegetable or meat Quiche - use 1 oz (1/4 cup) grated desired cheese and 1/2 - 3/4 cups chopped, cooked, well drained brocolli, spinach or cooked chicken or cooked bacon

Do not completely cook and be sure to watch so the bottom doesn't "puff" - if it starts to, just take a fork or knife and lightly 1 - 9" pre-baked pie crust (wrap edge with foil so it will not burn) lift edge for steam to escape - or you can weight the crust with dried beans on foil in bottom of crust

Bake at 375 degrees - 30 - 35 minutes or until golden brown
