Roasted Turkey


Pre-heat oven to 500 degrees.

Rub outside of turkey with soft margarine. Aprinkle salt and pepper in and out. Put chopped celery and sliced onion inside turkey. Place turkey on a rack in a large roaster pan. If it is too large for lid to fit tightly, just place in roaster not on rack. Add 1 cup water. COVER TIGHTLY!!!!!!!!!!!!! - Cook 1 hour. Turn oven off and DO NOT OPEN OVEN DOOR OR TAKE LID OFF UNTIL MORNING!!!!!!!!!!!

If turkey is larger than 15 pounds - cook with oven on about 20 minutes longer.
