Cornbread Dressing
6 slightly beaten eggs
6 cups buttermilk
1 cup flour
3 cups white cornmeal
2 cups yellow cornmeal
3 tsp. salt
3 tsp. soda
Mix & bake in 2 greased long pans at 450 degrees for 30 minutes or until light brown. Cook 3 cans (10 to a can) of buttermilk bisquits according to directions on can (just store brand will do fine). Break up cornbread and biscuits in small pieces. Add about 3 quarts chicken or turkey broth. Saute in margarine 2 large chopped onions, package of chopped celery (or you can cook the celery and onion in a little water in the microwavve until tender.)
Add:
6 eggs (slightly beaten)
3 - 4 tsp Poultry Seasoning
1 1/2 tsp. onion salt
1 1/2 tsp. celery salt
3/4 tsp. pepper
1/2 tsp salt
1 tsp. sugar
Mix well and mash around with potato masher until mixture is fairly smooth. Put into 2 long pans - Bake at 400 for 45 minutes or until browned. Makes enough to serve 20 - 22 people. Just divide ingredients in half if you just want to make one pan.
