Baked Apples (Microwave)

4 medium sized tart baking apples
2 Tbsp. chopped pecans
2 Tbsp. raisins
4 Tbsp brown sugar
4 tsp orange juice
1 Tbsp lemon juice
1/2 tsp cinnamon

Remove apple cores but do not cut all the way through to the bottom. Peel a 1-inch strip around the top of each apple. Halfway down the apple, cut a 1/4- inch deep slit in the skin around the circumference; this will allow steam to escape without the skin splitting. Place the apples in 4 (10 oz) custard cups or around the edge of a 9-inch round cooking dish. (The dishes should be microwave safe.) Into the cavity of each apple, spoon 1 TBsp raisins or nutes (or half & half), 1 TBSp brown sugar and 1 tsp orange juice. Sprinkle with lemon juice and cinnamon. Cover with plastic wrap turned back slightly. Microwave on High for 6 to 7 minutes, respositioing individual dishes halfway through cooking time. Makes 4 servings
