When life hands you lemons, what do you do? We discovered this amazing receipe at The Wharf in Grand Cayman- big thank you to Reno and Executive Chef, Christian Reiter.

Cream
Sugar
Lemon Juice
Gelantine (Gelatin?)
Eggs
Butter
Lemons
Flour
Sour Cream
Lemon Sorbet

500ml cream
150g sugar
50 ml Lemon juice
2 gelantine
1. Bloom gelantine in cold water
2. bring cream, lemon juice and sugar to a boil add bloomed gelantine and fill in small glasses and let set in fridge

Lemon Curd
8 egg yolks
140ml lemon juice
200g butter
180g sugar
Place all ingredients in stainless steel bowl and place on top of a double boiler and whisk until starts to thickening. Remove from heat, pour in container and let set in fridge.

Lemon Pudding
120g butter
220g sugar
8 eggs
6 egg yolks
2 lemon juice and zest
180g flour
600g sour cream
1.whip butter and sugar until white and fluffy
2.add all egg yolks, lemon juice and zest
3.stir in sour cream
4.whip egg whites to soft peak
5.combine flour and egg and sour cream mixture
6.gently fold in egg whites
7.fill in greased heatproof dishes and bake in water bath at 350F about 12 min or until baked
8.serve warm
Assemble like in picture (serve with your favorite lemon sorbet)
